About Us
Laura Matthias has worked as a field biologist for over a decade, studying rare and endangered plants and animals. Working with endangered species, often on the brink of extinction, has impressed upon Laura the impacts that humans are having on the environment, on both a local and a global level.
Her background in biology led her to an interest in organic food production, growing and marketing certified organic produce through her farm market and to local gourmet restaurants, as well as providing fresh products for her former organic B&B operations. Growing healthy, organic produce is one of the most positive actions one can take, providing local food for your family and community that has not been depleted of nutrients through miles of transportation, and therefore is responsible for no carbon emissions!
Her commitment to environmental consciousness extends to her view on food consumption and production, which has paved the way for the release of her first gourmet vegan cookbook ExtraVeganZa: Original Recipes From Phoenix Organic Farm (New Society Publishers, 2006; www.newsociety.com). A long-time vegan, she has researched the nutritional value of foods and has cooked vegan food as a personal chef for clients with dietary sensitivities.
Laura lives with her son, Kinkade, who has been raised as a healthy, vibrant vegan from birth!
